Cuisine Filipino
- 2 chicken leg quarters
- 6 cloves garlic crushed
- 1 teaspoon whole black pepper
- 1 stalk onion leeks cut into pieces
- 1 tablespoon salt
- 1/2 cup Sweet Baby Ray’s BBQ sauce
- Water enough to cover the chicken
Place the chicken leg quarters in a pot. Add crushed garlic, whole black pepper, onion leeks, and salt. Pour enough water to cover the chicken.
Bring it to a boil and cook for 15 minutes.
Turn off the heat and let the chicken soak in the hot broth for another 15 minutes.
Take the chicken out and let it air dry.
Rub the chicken with your barbeque sauce. Let it sit for a few minutes to absorb the flavor.
Preheat the air fryer to 400°F.
Place the chicken in the air fryer basket. Cook for 10 minutes.
Brush more BBQ sauce on top. Cook for another 5 minutes or until the skin turns sticky and caramelized.
Let the chicken rest for a few minutes before serving.
- Air drying the chicken helps the sauce stick better and gives a nicer finish.
- You can add more sauce during the last 2 minutes if you prefer a thicker glaze.
- Save the flavorful broth for soup or noodles.
